Today I woke up with the left foot – the right one.
I did the sun salutation, I thanked the universe, I had coffee, and then I thought: why not stuff the potatoes with a filling of symptomatic mystery?
I know, at the first sight, it’s not clear what this cheesy baked potatoes are hiding, but a little mystery is always well and good. Even more if what is being concealed reveals pleasant surprises, such as speck, Asiago cheese and sun dried tomatoes. Just to “enhance” your potatoes forgotten in the pantry, or to spice up the same baked potato. I promise you that when you’ll cook – and taste – this recipe, you’ll make a joyful noise, because they are really amazing.
In addition to this, I also thought about big problems: nowadays real and virtual life are increasingly conflating and our everyday trespasses continuously on the Internet, don’t you think we have to apply the civilisation rules and common sense also in this space?
The responsibility of take care and “clean” the Internet eco- system is up to each of us. Isn’t it?
But, you’ll say – and I say: in a world where trample on someone to stay on top is the norm and not the exception, can this nice words escape from Utopia? What is certain is that getting started is half the job.
In the overwhelming sea of Social Media – it is a fact – the insult is around the corner.
Turn the other cheek and put flowers in your keyboards.
Be Human, even in our most deformed shape hovering in the ether.
And in the frenzy wanting to give a speech at any cost, it would be a big deal push our brains to distill words “up” and silence the “down”?

Cheesy baked potatoes – the recipe
INGREDIENTS (serves 6)
- 6 potatoes
- 4 sun-dried tomatoes
- 100 grams of Asiago cheese
- 100 grams of speck (or bacon)
- A quarter of a red onion
- Grated Parmesan q.s.
- Salt, black pepper, oregano, extra virgin olive oil, butter q.s.

METHOD
- Cook the potatoes;
- Simmer the chopped onion with a little olive oil, so add in the chopped speck (or bacon) and cook for a minute.
- Slice the dried tomatoes, and dice the cheese.
- Once the potatoes are cooked and let them cool off and then peel them. Cut the top and put it aside (you can make dumplings, or potato salad).
- Now, helping with a teaspoon, “empty” the inside of the potato, obtaining a sort of “shell”. Put the inside of the potato in a bowl and smash it with a fork, add salt and pepper.
- Add in also the Asiago cheese, the speck with onion and dried tomatoes, so mix with the smashed potatoes and mix everything.
- Cook the potato shells greased with melted butter in a preheated oven at 200° C for about ten minutes.
- Fill the potatoes with the speck-onion-cheese stuffing, sprinkle with grated Parmesan and olive oil.
- Bake for fifteen minutes or, at least, until golden brown.
