In fact, this <\/span><b>vegan quinoa with November vegetables &amp; spinach pesto<\/b><span style=\"font-weight: 400;\">, reflects all that my way of seeing the kitchen, in front of the mirror, would not reflect. But <\/span><span style=\"font-weight: 400;\">where&#8217;s<\/span><span style=\"font-weight: 400;\"> the harm in changing, in revisiting <\/span><span style=\"font-weight: 400;\">and<\/span><span style=\"font-weight: 400;\"> reinterpreting <\/span><span style=\"font-weight: 400;\">yourself<\/span><span style=\"font-weight: 400;\">, in wanting to be &#8211; just sometimes, otherwise bipolarity is around the corner, it\u2019s a moment &#8211; other than yourself? Someone said that <\/span><i><span style=\"font-weight: 400;\">if<\/span><\/i><i><span style=\"font-weight: 400;\"> nothing ever\u00a0changed<\/span><\/i><i><span style=\"font-weight: 400;\">,\u00a0there would be no butterflies<\/span><\/i><span style=\"font-weight: 400;\">. And I just really, really, really like butterflies.<\/span><\/p>\n<p>&nbsp;<\/p>\n<h5><strong><span style=\"font-weight: 400;\">INGREDIENTS (serve<\/span><span style=\"font-weight: 400;\">s<\/span><span style=\"font-weight: 400;\"> 6)<\/span><\/strong><\/h5>\n<p>Quinoa with November vegetables<span style=\"font-weight: 400;\">:<\/span><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">300 gr of quinoa<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Half a red onion<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 leek<\/span><\/li>\n<li><span style=\"font-weight: 400;\">3 carrots<\/span><\/li>\n<li><span style=\"font-weight: 400;\">300 gr of frozen peas<\/span><\/li>\n<li><span style=\"font-weight: 400;\">300 gr of snow peas<\/span><\/li>\n<li><span style=\"font-weight: 400;\">300 gr of potatoes<\/span><\/li>\n<li><span style=\"font-weight: 400;\">A small <\/span><span style=\"font-weight: 400;\">romanesco broccoli<\/span><\/li>\n<\/ul>\n<p>Spinach pesto:<\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">30 gr of pine nuts<\/span><\/li>\n<li><span style=\"font-weight: 400;\">200 gr of fresh spinach, blanched for a few seconds<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Two handfuls of basil leaves<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Extra virgin olive oil, salt and black pepper q.s.<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p style=\"text-align: right;\"><strong>MATCHING SOUNDTRACK: <\/strong><br \/>\n<em><span style=\"font-weight: 400;\">I gotta get the world off my back, Bill Martin &amp; Phil Coulter<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><a href=\"http:\/\/test.theeatculture.com\/wp-content\/uploads\/2016\/11\/quinoa_1.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-14214\" src=\"http:\/\/test.theeatculture.com\/wp-content\/uploads\/2016\/11\/quinoa_1.jpg\" alt=\"quinoa_1\" width=\"850\" height=\"1051\" srcset=\"https:\/\/test.theeatculture.com\/wp-content\/uploads\/2016\/11\/quinoa_1.jpg 850w, https:\/\/test.theeatculture.com\/wp-content\/uploads\/2016\/11\/quinoa_1-242x300.jpg 242w, https:\/\/test.theeatculture.com\/wp-content\/uploads\/2016\/11\/quinoa_1-828x1024.jpg 828w, https:\/\/test.theeatculture.com\/wp-content\/uploads\/2016\/11\/quinoa_1-330x408.jpg 330w, https:\/\/test.theeatculture.com\/wp-content\/uploads\/2016\/11\/quinoa_1-690x853.jpg 690w, https:\/\/test.theeatculture.com\/wp-content\/uploads\/2016\/11\/quinoa_1-469x580.jpg 469w\" sizes=\"(max-width: 850px) 100vw, 850px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<h5>METHOD<\/h5>\n<ol>\n<li><span style=\"font-weight: 400;\"> Wash and dry all the vegetables.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Put on the stove a <\/span><span style=\"font-weight: 400;\">drizzle <\/span><span style=\"font-weight: 400;\">of extra virgin olive oil in a large frying pan, gently fry the onion and leek previously <\/span><span style=\"font-weight: 400;\">sliced<\/span><span style=\"font-weight: 400;\">.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Add the diced carrot, the peas and the chopped snow peas. Add salt and cook slowly with the lid.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Steam the chopped potatoes with broccoli.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Now cook the quinoa: rinse the seeds under running water to remove the saponins, put them in a pot and add, in <\/span><span style=\"font-weight: 400;\">a<\/span><span style=\"font-weight: 400;\"> ratio <\/span><span style=\"font-weight: 400;\">of<\/span><span style=\"font-weight: 400;\"> 1:2, cold water (essentially, 300 gr of quinoa will take 600 gr of water) so add the salt. Bring <\/span><span style=\"font-weight: 400;\">it<\/span><span style=\"font-weight: 400;\"> to a boil, put the heat to low and let it simmer for 10 minutes with the lid.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Saut\u00e9 the cooked quinoa with the vegetables.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Make the spinach pesto by blending together spinach, basil, pine nuts, salt and olive oil.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Grind the potatoes and broccoli with a fork, season with a little oil, salt and pepper and use the mashed vegetables as a base of the dish. Add in the saut\u00e9ed quinoa and<\/span><span style=\"font-weight: 400;\">, lastly<\/span><span style=\"font-weight: 400;\">, the spinach pesto.<\/span><\/li>\n<\/ol>\n<p><span style=\"font-weight: 400;\">If you prefer, instead of a radical chic <\/span><span style=\"font-weight: 400;\">dish out<\/span><span style=\"font-weight: 400;\">, you can mix all the vegetables together.
